Well the hype is pretty much gone, but Pocket God was a great game, if you started from the first update and got the weekly one. Now they are just getting lazy and releasing them like months apart. It still is a good play for $.99
Also when you have an internet connection get the free versions of some games and try them out and see if you like them. Tap Tap is a fun game!

Chinatown wars maybe?
If you want essentials that take advantage of the Touch's interface (ie, no gamepad style onscreen buttons) and is good in short bursts:
- Bejeweled 2. It's Bejeweled, it's cheap, it runs well, it's addictive, and it's great in small amounts.
- Montezuma's Revenge. Very much like Bejeweled, only with a bit more depth to it. I would be inclined to recommend it over Bejeweled 2 as it's cheaper and has more content, but sometimes simplicity is better, and Montezuma tends to crash periodically which gets annoying. It is technically a better game.
- Galcon. Sort of a real-time Risk in space. Kind of. Planets fill the screen, you poke and swipe to send your ships to whittle down their defenses and take them over, where they start producing ships for you. Your opponent does the same, so it's basically a lot of sending ships to attack and sending ships to bolster defenses as you try and destroy your opponent. And a round doesn't last much more than a minute or two.
- Flight Control. Very simple game where you draw landing paths for incoming aircraft, directing them to the runways without them hitting one another. It's 99 cents, easy to play, good for killing time. Not a lot of depth, though.
- Hook Champ. One of the few platformers that actually works on the iPhone/iPod Touch without being awkward. You touch the right side of the screen to run ahead and tap anywhere above you to launch your grappling hook, which acts as your method of jumping and traversing the levels. It takes a bit of time to get used to the swinging mechanics but there's a good amount of content in there and each level is quite short.
- Peggle. It's Peggle.
- A lot of people like Spider: Secret of Bryce Mansion. I didn't get into it as much as everyone else, but it's certainly unique.
NOVA and Sandstorm: Modern Combat are the big ones right now. Eliminate Pro also gets a lot of talk (plus it's free) but I don't like it due to the clumsy controls and the fact that it wants you to pay for everything (plus it has the most annoying push notifications I've ever seen). I'd also recommend Labyrinth Lite. It takes very good advantage of the itouch's acceleorometor (I know I spelled that wrong). Unblock Me is also a pretty fun puzzle game and the free version gives you a lot of content. If you like flight games then HAWX is also a good choice although imo the controls are mediocre.As for how many games an 8GB itouch will hold...about 8GB worth :P Seriously, games vary wildly in file size. Some are only a few MB in size while others approach a GB, so the amount of games your ipod can hold depends entirely on which games you put on it.

Get GTA Chinatown Wars. This game has got to be the biggest (In terms of content), funnest, and best designed game I've ever played on the iPhone.
Zenonia, Doodle Jump, and Inotia 2 are great fun, but you might have trouble with the ''stop playing'' part. ;)
doodle jump its 1.00 but really addictive, gta chinatown wars $11 dollars or so and call of duty Nazi zombies $12 and need for speed undercover $6.
if your a cheapskate try: assassin creed altar chronicles TRAIL, blades of fury TRAIL, tap tap revenge 2 or 3 and tap defence.
